It was more than 15 years ago when Babirusa proprietors, Charles Walpole and Rene Gutierrez, first met in Seattle. While working together, they began formulating an idea of the restaurant they wanted to open.

Both had meticulously honed their kitchen skills, Walpole at the Culinary Institute of America NY and Gutierrez at the legendary Magnolia Grill in North Carolina. They share the idea that when it comes to food, ‘more is not always better’. For them, the goal of every dish is for the elements to enhance one another and interact independently.

Babirusa takes pride in operating in a low waste, sustainable manner which supports the whole farm and small businesses in the PNW.

Guests of Babirusa leave satisfied, inspired by the food which surrounds them, and hungry for another taste.

What is a Babirusa?

A Babirusa is an indigenous pig native to the Indonesian islands. An omnivorous, traveling animal, the Babirusa swims between islands to forage for food and is often gifted to royalty and special visitors.
